Without a doubt, one of the most pleasurable aspects of exploring Middle Eastern culture is the cuisine. Here is a sampling of recipes from a variety of sources. I highly recommend all of the cookbooks mentioned, particularly those of Claudia Roden – and my latest personal favorite – "Arab World Cook Book" by Nahda Salah.
